Apparently shipping via USPS has suddenly become more expensive over the weekend. Yes, they give the cheaper option through UPS. But why would I want to add the extra time and money by having to delivery the packages to UPS when USPS picks them up at my convenience at no extra cost????

That is not a problem. You own your own business. You purchase shipping where you want. Now remember, the buyer always pays the shipping in the mail order business.
So, it is your responsibility to the know the exact shipping cost you will charge before the product is even listed for sale, or you lose profit. When a shipping ratee increases in your desired shipping method, raise your offering price accordingly across your total product line. Unless you don't mind losing profit.
