WHY is Amazon adding Countries like Brazil & Mexico to my USA selling account...

I did not sign up for a Unified Global selling account. I did not ask for this, nor did I want it. It is being done without my permission or consent.

HOW do I Opt Out of everything Global and continue with a simple USA selling account? My business is now on Hold until I figure out how to not make listings for Brazil & Mexico every time I make a new listing!!

You did in fact sign up for a Unified account; there is no other way to sell on Amazon.com, as annoying as it is.

Put all the marketplaces you do not wish to sell on in Vacation mode; also make sure that you do not have any listings (active or inactive) on those marketplaces.

Whatever you do, DO NOT ASK AMAZON TO DELETE OR REMOVE THOSE MARKETPLACES!!!!

Simply asking may result in having your entire account shut down, and Amazon has no idea how to fix that problem that they themselves caused. so I'll repeat:

DO NOT ASK AMAZON TO SHUT DOWN ANY MARKETPLACES!!!! Just put them on vacation and don't worry about them.

Check your account settings. There are several settings in there that result in listings automatically populating in other countries.

If you are selling FBA you'll also want to check Remote Fulfillment.
