If you wish to take a long weekend (a great idea), add a day to your handling time starting on Thursday; make sure you ship all orders on Friday, and you should be good to take the day off, and ship everything on Wednesday. (if you offer expedited shipping, be sure to turn that off).

You can always find a list of what Amazon considers holidays by going to Settings --> Shipping Settings --> General Shipping Settings tab, scroll down to Holidays.
Here's the current list (minus earlier holidays because they're already passed).
